At Sanchez, we only use Maiz Criollo. We obtain this corn from small producers in Mexico who use traditional agricultural techniques to grow organic and sustainable harvest. The seeds have been passed down generations and vary from region to region. The farmers grow for themselves and sell the extra corn. We work with organisations like Traspatio Maya (non-profit) and Aga Productora to help achieve this. These organisations provide the small producers with technical assistance and help with selling their product at a fair price, hereby developing their communities. At Sanchez, we believe in being socially responsible in the way we source and represent the ingredients that come from Mexico. Without them, we could not do what we do.
Sanchez is open for dinner EVERY DAY from 17.00-00.00 (kitchen closes at 22.30)
On Saturdays and Sundays, we serve brunch from 11.00-14.45 (kitchen closes at 13:45)
